Gaitán gained international acclaim for her role as Sayra in the award-winning 2009 film Sin Nombre, directed by Cary Joji Fukunaga, and for her portrayal of Adriana in the human trafficking drama Trade (2007). To global television audiences, she is perhaps best recognized for her role as Tata Escobar, the wife of drug kingpin Pablo Escobar, in the Netflix hit series Narcos.
